Pan fry frozen prawns in a bit of hot oil and garlic (or alternatively buy frozen garlic prawns). Fry them until the prawns are pink all over. About 4-5 mins.
In the microwave put a bowl of peas, edame beans, black beans (half a tin drained and washed) and sweet corn (if you like) with a bit of water in the bottom and cling film over the top for about 3 mins or until they are cooked, but still crunchy.
Drain the pea mix and liberally drizzle over olive oil and grate on a bit of salt.
Chop leafy herbs from the garden – I used a good handful of oregano, dill and carrot tops – finely snipped.
Mix with the peas/beans.
Ladle onto a plate and then top with prawns.
Dish delish, especially with a cold white wine 😉
