A bramley apple sized ball of mince beef from the butcher. Probably about 200g weight.
1-2 carrots
1 large red onion
2 sticks celery
6 brown mushrooms quartered
1 green pepper
Put all the veg except the mushrooms in a chopper and finely dice (or do it by hand)
Put oil in a large saucepan or deep rimmed frying pan and turn on to medium hot heat
First fry onions, then add rest of veg
Cook until water has evaporated and they start to brown. Keep stirring so they don’t stick.
Then add mince beef
Stir so it doesnt stick until beef no longer looks pink
Add mushrooms
Add a can of chopped tomatoes
Add a table spoon or 70g tomato puree. (cirio is my favourite)
Add a teaspoon balsamic vinegar and a teaspoon of honey and a teaspoon of marmite. These are the magic ingredients.
Salt and pepper and oregano to taste
Then stir it altogether and let it simmer on low heat. You may need to add a good splash of boiling water to make it more saucey and less like a lump of meat and veg mix.
After 15-20mins of slow cooking taste and season to taste again.
Then boil some water in a new pan and add a good bundle of black bean spaghetti to the water. Boil for 3mins, strain then drizzle with olive oil and salt. Mix.
Serve the spaghetti and bolognase then grate over some strong or parmesan cheese.
Eat.
