Roast veg and baked feta with bay

Preheat oven to 180’C

Put a desert spoon of coconut oil on a baking tray and place in heated oven.

Deskin and half lengthways 4 echalion onions

Thickly slice an aubergine into fat chips

Brush clean some foriestiere mushrooms

Remove the baking tray from the oven and turn the veg in the melted oil. Spread the veg out on the tray so it doesn’t overlap.

Make a foil parcel around a block of feta with approx 5 bayleaves placed on the surfaces of the cheese.

Put this on a separate tray.

Put the veg in the oven for 10 mins, then add feta to the oven for a further 20 mins.

Remove if the veg is browned and turning crunchy in part.

Plate up the veg. Salt and pepper the veg, spoon over the cheese removing the bay leaves
