Leeks, sprouts and cheese

Cook in coconut oil a leek, banana onion and sprouts finely chopped. Cook until soft. 

Add creme fraiche. About 2-3 tbsp. 

Salt and pepper and a good dollop (1 rounded tsp) french mustard. 

Crumble a few thick slices of mature cheddar cheese into the mixture. 

Stir in over heat. 

Tip into an ovenproof bowl. Grate some cheese on top. Put in preheated oven at 200’C for 5 min until top is  browned. 

Eat.
