Quick midweek supper

on

Two beetroot, top and tailed then roasted in slices on a roasting tray with coconut oil on at 200′ for 35mins

Spinach leaves

Mixed baby leaf salad bag

Goats cheese with herbs and garlic (or without if you dont want to offend) 

I had half a chicken breast left from my roast chicken, so I snipped it into chunks and scattered  it on 

Pumpkin seeds

Olive oil and balsamic and a tsp french mustard, salt and pepper shaken together as a dressing. 

A small glass of red wine… Well it is midweek 🙂
