An amalgamation of a few recipes, the kids loved them and im on my third. Not for those following carb free plan, but ok if you are healthy eating!
Into one bowl, add:
250g spelt flour
Desert spoon stevia sugar (or honey/maple syrup) if you want it a bit sweeter, make it heaped! I just used 3 tablespoons honey and they were sweet enough, but not cake sweet.
Tablespoon greek youghurt
65ml almond milk (or normal milk)
A banana (squashed in its skin to make it easier to stir in)
2 carrots, grated
50g or a few handfuls raisins
Heaped teaspoon ground cinnamon
1 tsp bicarbonate of soda
2 tsp baking powder
Mix it all together
Put in muffin cases in 180′ oven for 15-20mins, or until browned and risen.
