Take 3 organic eggs, whisk whites to stiffish peaks then fold in yolks. Pour into deep frying pan with coconut oil covered base to reduce burning. Then crumble over feta cheese. Mandolin a fresh beetroot. Microwave beetroot for 3 mins in bowl. When omlet has a browned base and top starts to appear more solid (10 ish mins on low heat) spread over beetroot slices. Top with a bit of grated cheese and peper. Then put under a grill on high for few mins until cheese bubbles. Fold out onto plate. I served with broccoli. Mmmm.
